My macaroni and cheese kitchen is smiling.

Smiling from ear to ear because I made a recipe with more than four ingredients.

There are seven ingredients to be exact.

And it’s healthy…only 387 calories per serving.

Maybe a few more calories if you added extra walnuts to your plate…like me.

Delicious with extra walnuts never tasted so good.

 

Spinach Walnut Penne

Ingredients

Ingredients

  • 2 cups reduced-sodium vegetable broth
  • 1 can (14.5 oz each) Hunt’s® Diced Tomatoes with Basil, Garlic & Oregano-No Salt Added, undrained
  • 2 cups dry multigrain penne pasta, uncooked
  • 2 tablespoons Fleischmann’s® Made with Olive Oil Spread
  • 1 pkg (6 oz each) baby spinach leaves
  • 1/3 cup chopped walnuts
  • 1/2 cup shredded Parmesan cheese

Directions:

1. Combine broth, undrained tomatoes, pasta and Fleischmann’s in large skillet.

Bring to a boil over high heat, stirring occasionally.

Cover skillet, reduce heat to medium and cook 15 minutes or just until pasta is tender, stirring occasionally.

2. Stir in spinach and cook 3 to 4 minutes or until spinach is wilted, stirring occasionally.

 

Walnuts

 

Sprinkle with walnuts and cheese just before serving.

    All this time I thought we were friends, birds of a feather, like minded non-cooking pals….. And then you do this to me, sigh. Ok, so I guess even I can handle 7 ingredients that I don’t have to measure, chop, julienne, knead, saute, blah, blah, blah. Maybe, just maybe you’ve brought hope to the small population of folks who just don’t like to cook and think that those that do should find something to paint. :)

  15. This is similar to my very favorite dish of all time at a restaurant called Bravo – the dish is called Penne Mediterranean and I just had it again the other night! They use pine nuts instead of walnuts, but it is very close – yum. I don’t eat much meat and it is a wonderful recipe, thanks so much.

    I am going to definately fix that soon!

  21. That sounds yummy! I would probably replace the walnuts with pecans because I don’t like walnuts but the rest sounds delightful!

  22. Pretty fancy dancy, Kari Anne. This really looks delicious. The only thing I would change is the tomatoes. You should look for tomatoes in a glass jar instead of a can :)
