Strawberry Blueberry White Chocolate Bark

Strawberry Blueberry White Chocolate Bark

It was almost girls gone wild at the Cracker Barrel.

This close.

It was date day and I was sitting across the table from my husband talking about this new dessert I was going to make and trying to get his opinion on navy nail polish and when did navy nail polish become so popular and why everyone is wearing it now and whatever happened to a simple nail polish that is clear or pink or red.

Yep.

A super important discussion.

And right in the middle of nail talk for the year 2013….I totally noticed how cute he was.

I couldn’t help it.

His hair was kind of wavy in that perfect way and his eyes were twinkling as he tried to look remotely interested in the intense nail polish discussion and he was wearing the cutest old t-shirt with paint splatters on it from the gatehouse craft room project and he looked just like Patrick Dempsey in “Can’t Buy Me Love” when he drove around on that lawnmower.

And I stopped.

And stared.

And then….maybe because I paused….or maybe he noticed how cute I was at that exact moment, too….because he reached out and took my hand……

….and winked.

A really cute wink.

That’s all it took.

Good thing there were two cups of very hot coffee between us.

Good thing I can resist a wavy haired t-shirt wearing Patrick Dempsey look-alike.

Good thing I walked calmly out of the restaurant holding his hand all the way.

*sigh*

A kiss from the cutest man this side of the Mississippi in the Cracker Barrel parking lot ….

….reason number 244 why date day is the best day of the week. :)

Strawberry Blueberry White Chocolate Bark

adapted from this bhg recipe

Ingredients

25 vanilla wafers

16 oz. white chocolate bars (I used the bars that were 4 oz. each)

1 cup sliced fresh strawberries

1/2 cup fresh blueberries

blueberry-recipe

1.  Line an 8 x 8 pan with foil (this makes it so much easier to lift out and cut after the chocolate has hardened).

Place vanilla wafers on the bottom of the pan.

25 should form one layer.

2. In a medium saucepan heat 12 oz. of the chocolate until melted.  Stir continuously and watch carefully so the chocolate doesn’t burn.  Take the remaining 4 oz. of chocolate and break into small pieces and put into a bowl.

Pour the melted chocolate over the chocolate pieces in the bowl and then stir until all pieces are melted.  This ensures the chocolate melts evenly and lets it set easily when cooled.

3.  Pour the melted chocolate over the vanilla wafers in the pan and spread with a spatula.

Let cool for 5 minutes and then press the sliced strawberries and blueberries into the slightly cooled chocolate.

Store in the refrigerator for up to 24 hours.

Makes 16 servings.

The wavy haired t-shirt wearing Patrick Dempsey look-alike hung around the kitchen until I finished making the bark.

As soon as they cooled….he ate two bars.

And then he smiled…..winked again….

….and went out to ride into the sunset on his lawnmower. :)

  1. I loved your post! Just found your blog yesterday and love it. Still wandering around and finding new things to try. After 40 years the hubs and I still have date night every Friday…..who would have thought!

  2. Isn’t it wonderful when you still remember why you fell in love in the first place? Hold on to that. I have 40 years with a wonderful handsome man and it is a true blessing. You and your family are blessed…your love for one another makes your children happy, too, I just know it.

  3. Lucky girl.

  4. I sure do love that movie. Patrick Dempsey was my favorite way before he was McDreamy. And this dessert looks yummy!

  5. Oh my I kind of had the same thing happen to me at dinner last night. The boys were talking about I can’t remember what and my oh so cute husband was listening to them ever so intently and at that moment I realized just how cute he is and why I fell in love with him. And at the same time he looked at me and smiled. That was it though because our dog started jumping around letting us know he needed to go outside and our youngest had to get ready for karate. I love moments like that. After 22 years he still melts my heart.
I love your stories and that strawberry blueberry white chocolate bark looks so yummy. Thanks for sharing.

  6. Lucky boy, too!

  9. I do love me a cute boy who thinks I am the funnest lady in the world on date night in a parking lot. I am so glad you guys are smart enough to escape and go on dates. I just think date night makes the world a better place. Jury’s out on navy nail polish though. I am kinda partial to lighter blues and greens, but only on my toes.

  18. Such a wonderful post! I loved your date day story. So heart warming and sweet. It put a smile on my face! Sounds like you have a wonderful hubby and marriage. :-) And, your photos of those beautiful berries….yum…I can almost taste them!

  19. What a great story, I love your stories. Isn’t it wonderful when you can be with someone that still makes you feel like that. My husband still does that for me, he just smiles sometimes in a certain way and I love him all over again. I enjoyed the nail polished discussion too, I have to admit. What has happened to nail polish? I have been getting my nails done since I was 21 and I still do it now at 48. It is an indulgence for me that I will not miss. Blue, green, turquoise is all over. Some can really pull it off but not me at all. Lipsticks I will dabble in, I sort of hoard it, LOL! Can’t wait to try this recipe out either.

  20. Melts my heart…. Lovely story and can’t wait to try the chocolate bark! :)

  21. You have the best husband ever.. next to mine :) I love that you do date day.I think marriages would be much stronger if everyone took the time like that.

    • Jennifer – I TOTALLY agree. With all the sad, bad news we hear about marriages that don’t last, it’s SO refreshing to see that there are some that work. And W-O-R-K is the operative word here.

Karianne and her husband are great examples.

Husbands and wives that work to keep things positive are to be commended. Being married to my wife for 26 years, I can say things like that. : – )

Let’s here it for the couples that work hard to keep their relationship strong. And Christ-centered.

SIDE NOTE: It’s so important that our kids see what a happy marriage looks like. We can preach it all day long. But when we LIVE it, that’s what counts.

      All the best,
      Michael

  22. Another great story Karianne..Have a great weekend..

  23. I just started reading your blog & following you on FB. Did you ever post (or will you) a picture of you and your husband? Would so love to see that? Maybe you could do one of those family Christmas cards and share with us or something like that :)

  24. I just love the way you love your man, Karianne! What a treasure you have….am so happy for you. I’ve got a keeper, too, and love him more than all the chocolate in the world. (And THAT’S saying a lot!!)

Blessings to you and your sweet family!

  25. Awwwwwe! What is the ending? hehe Just kidding!
Enjoy your man, mine is battling stage 4 renal cell carcinoma and he is cancer fre right now and we treasure our days together more than ever. Going on 36 years! Oh and the bark looks pretty tasty!

  26. Be still my heart.

  28. Oh, Miz karianne….that gave me misty eyes! My husband and I still….after 31 years together…..will every once in a while have one of those little “moments” at a most unexpected time. And we seize that moment….so sweet. I hope you’ll always be swept off your feet like that, and treasure every time it happens!

  29. I’m telling you, Karianne, I read your blog for your sweet stories and your loverly look at life! I can’t do one single THING with a paint brush without looking like I’ve been in a paintball competition and LOST! I’d sew my fingers to the sewing machine if I got within five feet of it. Burlap bows? Pul-eeze! But I love to write and I love to read your blog for that very reason. You can keep putting in the instructions for your cute projects for the rest of the girls. I don’t mind. Just keep the stories coming. THAT’S what this Minnesota gal checks on, every day!
